This is my first blog and I’m a little scared.

I joined Slimming World 12 weeks ago on 7 Feb 2017 and have lost 1 stone 3.5 pounds so far!

I still have some weight to loose before I hit my target 🎯 and thought I would share the rest of my journey with you.

Since joining I have felt more confident and dropped 1 dress size (2 depending on shops). I can now wear clothes that didn’t fit me last summer and feel a lot more confident.

My favourite breakfast has to be a homemade Breakfast Omelette 🥓🍳. I’ll post my recipe for this on here for you all to see.

Weight loss: -3lb

Just been weighed and I managed to loose 3 pounds!

So happy with my weight loss, I’ve really tried this week. I had one bad meal on Friday night but other than that was 100% on plan.

I’ll be uploading a new recipe tomorrow!

Almost weigh day!

Last week I put on 1.5lb! My second gain in 3 weeks 😕.

So this week I have been 100% on plan! I do struggle with speed foods as I like fruit but find salad boring.

Weirdly I’m actually looking forward to weigh in tomorrow. Hoping for a good weight loss.

Tonight I’m making Teriyaki Chicken Noodles for tea, I’ll post a recipe and picture up (as long as it goes well 🙈😂).

In other news, me and my boyfriend have had an offer accepted on our first house!

Recipe: Syn Free Carbonara!

So I never used to like carbonara or creamy pasta but since a naughty lunch at Bella Italia it is now by favourite, however no good for weight loss (as I found out the hard way).

I have discovered a syn free carbonara which isn’t actually too far off the real thing

  • Tagliatelle
  • Chicken
  • Bacon
  • Mushrooms (optional)
  • 2 eggs
  • 5 spoons of fat free quark (I use the garlic and herb one)
  • 60g grated Parmesan (2x HE A as this serves a minimum of 2 people)

  1. Cook the pasta
  2. In a separate pan fry (using fry light) the chopped chicken and sliced bacon (with all fat removed)
  3. Add the mushroom to the chicken and bacon. You can cut these as thin or thick as you want
  4. Prepare the sauce while this is cooking: whisk the eggs with the quark and add salt & pepper to taste
  5. Once all the meat is cooked through drain and add the cooked pasta to the meat and mushrooms
  6. Pour over the sauce made earlier
  7. Be sure to keep stirring so nothing sticks to the bottom of the pan
  8. After the sauce begins the thicken (about 2 minutes) your dinner is ready. Dish up and top with Parmesan.

Syn free ice cream! ðŸ¦

Hello, me again!

As summer is on the way I thought I would share an easy syn free ice cream recipe I found on Pinterest a while ago.

  • 2 mullerlight vanilla
  • 500g fat free fromage frais
  • Sweetener (to taste)
  • Vanilla essence

  1. Mix together the 2 mullerlight’s and fromage frais
  2. Add sweetener (to taste) and vanilla essence
  3. Place in the freezer and stir every 30 minutes to avoid ice crystals
  4. After a few hours your ice cream should be ready

Remember anything more than 1 tablespoon of sweetener per serving will need to be syned at 1/2 syn per tablespoon.

Mix with frozen fruit for a sweeter fast or include a flake for extra syns!

You can also use different flavoured yoghurts to make different tastes!

Recipe: Overnight Oats

My easy work breakfast: Overnight Oats. I love these, it’s filling, sweet and easy to make.

  • 40g porridge oats (HEX B)
  • Mullerlight Vanilla yoghurt
  • Frozen berries

  1. Weigh out your Oats, put half into a bowl/jar
  2. Top with half of your yoghurt
  3. Add a handful of fruit
  4. Repeat steps 1-3
  5. Leave in the fridge overnight

So quick and easy! The recipe can be changed to create different flavours, you might want to try a strawberry yoghurt or pineapple pieces with coconut yoghurt.

You can use fresh fruit but I feel frozen works better as it slowly defrosts to give extra taste throughout.

I’m being weighed tonight rather than tomorrow as I’ll be busy giving blood tomorrow, wish me luck!

Today’s plan

Hi everyone,

I’ve struggled a little this week with two meals out yesterday 🙈. So today I decided to plan it out.

Bacon (fat removed) and egg sandwich. On brown bread as my HEX B.

Chicken and mushroom flavour Pasta ‘n’ Sauce

Saturday night = takeaway for me so: beef in black bean sauce (8 syns) and boiled rice

Apple, orange, 3x Babybel Light (HEX A)

I know I could do better on my speed but it’s a good try considering I don’t really like much fruit and veg!

Recipe: Babybel Burgers

I saw another blogger post a photo of some babybel burgers on Instagram and they looked lovely. So last night I had a go myself.

This recipe will make 8 burgers.

  • 1/2 onion
  • 1 pack of 5% fat mince beef
  • Pinch of salt
  • 1 egg
  • 4 Babybel light (healthy extra A is 3 Babybel light or 6 burgers!)
  • Kingsmill Thins (healthy extra B for 1)

Preheat oven at 180 degrees.

Mix together onion, mince, salt and egg in a bowl.

Place half of the mixture onto a baking tray.

Cut the Babybels in half and place half a babybel on top of each burger.

Cover the top of the babybels with the remaining mixture to make a burger.

Bake for 20-25 minutes.

Serve in Thins for 5 syns each or 1 for your Healthy Extra B.

I served mine with a side salad and some ketchup and they were lovely 🙊.

I also had two left over for work the next day, made some fresh salad and warmed them up in the mircrowave with some ketchup.

Office Lunch: Microwave Omelette recipe

Hello all,

I’m so excited to share my lunch today!

I work in an office so have a microwave and a toaster to use at lunch time, making food optimising a little easier.

Today for lunch I made a microwave Omelette and it was AMAZING!

  • 1 slice of Ham
  • 1/4 chopped inion
  • 4 slices mushrooms
  • 3 eggs

  1. Cut up onion, mushroom and ham and place in a microwaveable bowl
  2. Whisk 3 eggs together
  3. Pour eggs on top of other ingredients in bowl
  4. Pop in the microwave for 3 minutes (checking half way through)

It’s as easy as that! It tastes amazing with a tablespoon of tomato ketchup on top for 1 syn.

Quick, easy and filling lunch.

I forgot to take a picture but will put one on my Instagram next time I make it @goalsummerbody2017

Today’s food plan

Hey everyone, I put on 1.5lb this week ☹️. But it is my first gain since starting 12 weeks ago.

Because of my gain I’m going to try 100% this week and write down everything I eat. I just wanted to share with you what today’s plan is:

Breakfast: 1 Apple, 40g of Honey Nut Shreddies.

Snack: 1 bag of cherry tomatoes

Lunch: Pasta ‘n’ Sauce (Arrabita)

Snack: Mullerlight yoghurt

Tea: Homemade SW chilli and SW chips

Hoping to finish the day on a maximum 6 syns by having a Curly Wurly after tea.
